Chef Jeremiah Bullfrog a/k/a Piggie Smalls

Chef Jeremiah Bullfrog's Notorious P.I.G. IV (Pork Is Good) went down on November 24, 2013 at the GAB Studio art gallery in Wynwood.  As most of you should know by now, Chef Jeremiah always throws a great food party and the first three P.I.G. outs featured great food and were a great time.   

But Jeremiah decided to turn it up a notch this year and invited some of his culinary friends to join in the fun. And his friends happened to be some of the best current talent in town. They all came to play and they all crushed it.

This was an A+ event and it was great to see Miami food fans come out to support it.  I can't wait to see what Jeremiah unveils for P.I.G. V.  Perhaps cameos from Brandon Baltzley and Sean Brock.  Hint hint.

You can catch more of Jeremiah's creations at his brand new spot Subatomic Sandwiches located inside the cafe at the Wolfsonian on South Beach.  Jeremiah is pairing his modern techniques along with his creative culinary side to prepare some killer sandwiches. A welcome addition to the Miami food scene.

Chef Jeremiah didn't just play the role of host. He also served some great pork treats.  First up was a tasty  pozolé with masa Cavatelli, radish, avocado.

A rising star, Chef Brad Kilgore from J&G Grill added some of his customary finesse and clean flavors to the party via a dynamite Confit de Cochon Raviolo with Matsutake-Lardo Emulsion and Sea Lettuces.

Another rising star, Chef Conor Hanlon from The Dutch delivered a knockout combination with his Choucroute Garnie. Here, Conor paired sauerkraut with a wonderful weisswurst braised in IPA along with baby carrots, pork belly and dijon mustard.  Serious stuff and someone to keep your eye if he competes in Cochon 555.

Another rising star Giorgio Rapicavoli of Eating House plated a colorful and delicious Phó-tế,
country pate with black olive tapenade, pickled veggies, edible flowers on Cuban bread.

The reigning Cochon 555 champion of  the 305 and easily one of the best chefs in town, Aaron Brooks along with his talented Executive Sous Chef, Jose Gamez from Edge Steak & Bar brought there Cochon "A" game.  They unleashed not one but three fantastic bites on the swine loving crowd.  Their pig plate included a Crispy Rib with jackfruit mustard, pork belly and a sensational slider comprised of terrine, pork liver pate and bread and butter pickles.  I need a tray or two of those for the Super Bowl.

As expected, The Pastry Man, superstar Chef Antonio "Nitro Coco" Bachour of J&G Grill satisfied our sweet side with two dynamite desserts.  Bacon Macarons and Bacon Sweet Potato Pie left everyone with a sugar high. His brand new book is available now for purchase on Amazon.

Gravity Brewlab was on site pouring great beer including their unique Salty Von Bismarck.

Miami's best bar, The Broken Shaker not only served some great cocktails but they also got in on the pig action too. Chef Steve Santana served a pulled pork crostini with cured lardo.

B&S Gastropub arrived for the post VIP session and served up some nice pork and beans.
