Sustain "Bubble Dunch" Photo Recap 12/11/11

The Sustain crew "let the bubbles flow" this afternoon during their Bubble Dunch.  It was a great meal that featured some nice pours including a 1990 Fleury Cepages Blanc.  They also poured an 04 for comparison which was excellent.  The 90 was good but a tad tired. The food was easily the best I've had their to date and the plating was equally impressive.  I'm not sure my pictures will give the event justice but I wanted to share them with you nevertheless...

olive poached rock shrimp, beet, kumquat, boniato chips

demi-smoked salmon, celery root, meyer lemon sabayon
1990 Fleury Cepages Blanc Champagne
braised veal cheeks, caramelized carrot, potato puree 

Hat tip once again to sommelier Daniel Toral and owner Jonathan Lazar for hosting another great wine event.
I'm looking forward to the next one...

Excellent photos of the entrees. This will be a good entry for a meal scrapbook if it is made.
