The following is a list of restaurants I would recommend visiting during Miami Spice. Factors include quality of restaurant, strength of menu and cost/value. *see below for more details on Miami Spice
NO-BRAINERS
Bourbon Steak (Fairmont Turnberry, Aventura) always does a great job with Miami Spice. This years menu looks even better. Lobster stuffed tempura squash blossoms and their American Wagyu flatiron steak make this a must do. Don't forget the duck fat fries and foccacia. They serve great cocktails and have great wine list that their sommelier can guide you through.
Meat Market (Lincoln Road, SoBe) also looks like a great deal this year. Starers include baby back lamb ribs and an Alaskan crab tail. Entrees include a lamb duo, ribeye steak and striped bass.
GO
BLT Steak (Ocean Drive, SoBe) Their chargrilled octopus is very good plus you can try one of their steak options.
Hakkasan (Fontainebleau, Miami Beach) Four courses plus a side of fried rice or noodles.
Sardinia (SoBe) The Animelle and salt crusted Mediterranean sea bass should get me there.
Scarpetta (Fontainebleau, Miami Beach) several options to choose from including their signature dishes.
Solea (W Hotel, SoBe) El Cochinillo (suckling pig) is calling my name. Braised veal cheeks are too.
ON TH FENCE
Charlotte Bistro (Coral Gables) The menu sounds good but I've never been so I can't give it a definite yes.
Sra.Martinez (Design District) I'm a fan of the restaurant and they provide several choices but I'm hesitant to recommend from a value standpoint.
Still waiting on menus from:
Forge, Setai, MIA Biscayne, Palme d'Or, The River Oyster Bar, Zuma & Timo.
The recommended list is unfortunately shorter than I anticipated. Hopefully the aforementioned restaurants with no menus will come strong and be welcome additions to the list.

*Miami Spice runs from August 1- September 30, 2010. Restaurants offer three-course meals (Lunch $22, Dinner $35 excluding tax and gratuity) Not all restaurants offer a spice menu for lunch or on the weekend so be sure to check before going.

I called the Setai and they read the menu to me. I tried to write it down but missed half of it. All I know is crispy fried squid salad, roasted pork belly and something with duck got my attention. I'll report back.
Charlotte Bistro is excellent. Please try it!
Oh and I am Anon and I have eaten there twice and loved it. I do not work for them.
I neglected to mention that out of the places I recommended ONLY Bourbon Steak and Charlotte Bistro offer their dinner menu on the weekends. Bonus points for them!! Scarpetta and Sra. Martinez offer on Friday night but not Saturday so plan accordingly.
